Happiness is Homemade Mini Butter Cookies: Here’s a Recipe You Can’t Resist

The act of baking has become a way for me to express my love for the arts. I create what I want to create, however simple or complex my creation may be. Recognizing my love for this art, my family and friends encouraged me to start my own bakery “Jay’s Creations” – a customized bakery at my home in 2019. With the help of my family’s support, I have been able to spare more time to use my creativity and unique ideas in baking.

Working on different baking projects provides me with joy and creative freedom to make whatever I envision. I have published a couple of dessert recipes in magazines published in the U.S. Here is a quick and easy recipe “Mini Butter Cookies” that’s very easy to make and kid-friendly as well. I hope you can try making these mini butter cookies and spread the joy of baking with your family!

Mini Butter Cookies

Ingredients:

All-purpose flour – 1 & ½ cups.

Unsalted butter (softened) – ¾ cup.

Powdered sugar – ¼ cup (add more sugar as per your taste).

Egg yolk – 1. 

Vanilla extract – 1 teaspoon.

Corn starch – 1 tablespoon.

Milk – 2-3 teaspoons.

A pinch of salt.

Method:

  1. Preheat oven at 350°F. 
  2. In a large bowl, add the room temp/softened butter.
  3. Add the powdered sugar and a pinch of salt. Mix them using a spatula until the mixture looks creamy and fluffy.
  4. Add the egg yolk, vanilla extract, and milk until the mixture is well combined.
  5. Add the all-purpose flour and corn starch, and fold the mixture using a spatula.

Note: If needed, you can add an extra teaspoon of milk to the dough mixture to adjust its consistency for piping easily.

  • Transfer the dough into a piping bag. You can use 1M/2D piping tip to form the mini butter cookies on a baking tray.
  • Bake the cookies in preheated oven at 350°F for about 10 mins.

Note: If needed, add an extra min or two until the edges of the cookies becomes golden brown).

  • Let the cookies cool completely before being served.
